I saw this muffin recipe on "Good Things Utah" a couple weeks ago and wanted to try it. I actually had a dream that I was eating them. I think I'll give it a try tomorrow. They seem pretty healthy and tasty!
{Joyful Heart Muffins}

Ingredients: Yeild 8
1 cup unsweetened applesauce
½ cup raw sugar
1 teaspoon real vanilla extract
1 teaspoon real almond extract
¾ cup unbleached oat flour
2 teaspoon baking powder
1/3 cocoa powder
½ teaspoon baking soda
½ teaspoon salt
½ semisweet vegan chocolate chips
1 dash cinnamon
1 teaspoon of oil (canola)
Preheat oven to 350
Mix all ingredients in bowl
Line cupcake pan with paper liners
Fill each with 1/2 cup batter
Bake 45-50 minutes

I thought they looked tasty too. I will have to try them.
